Saddlebrook Resort, the 480-acre retreat in Wesley Chapel, just north of Tampa, Florida, just unveiled a $92 million renovation that adds a splashy new pool scene, four new restaurants, and a redesigned golf courses from renowned architect Rees Jones.
Since its opening in 1981, Saddlebrook has hosted generations of athletes and travelers, earning a stellar reputation for its championship golf and top-tier tennis. Now, following a comprehensive redesign by Florida-based EoA Group, the resort has been transformed from the inside out. All 451 guest rooms and suites were reimagined with warm wood tones, a polished neutral palette, and nature-inspired artwork. Each opens to a private patio or balcony facing the fairways, pool, or nature preserve, while one- and two-bedroom suites add full kitchens and living areas for families and longer stays.
“Saddlebrook has always captured the spirit of Florida’s athletic and leisure lifestyle, and this transformation brings that legacy into a new era,” says Camilo Miguel Jr., founder and CEO of Mast Capital. “Our vision was to honor what makes Saddlebrook iconic while infusing it with new energy—from beautifully redesigned guest rooms and meeting spaces to elevated amenities that support group events and reflect how today’s travelers want to stay and play.”
Part of that vision is an ambitious new culinary program with four signature dining venues. Rare 1981, the flagship restaurant, celebrates Gulf Coast flavors in dishes like mojo-glazed shrimp skewers, seared snapper, and family-style sides. The sports tavern, which will open early next year, channels the property’s athletic roots with elevated pub fare, big-screen televisions, and communal tables. Palmhaus, set beside the resort’s 500,000-gallon Super Pool (the name is a nod to the 1984 Super Bowl hosted in Tampa), serves sandwiches and small plates alongside frozen cocktails, while all-day cafe Brew keeps early tee times and pool days fueled with coffee, pastries, and grab-and-go bites.
Beyond dining, guests will find a completely reimagined pool area with verdant landscaping and private cabanas, plus a new membership program that extends access to locals and beyond. The resort’s golf courses were redesigned by Rees Jones, known for renovating classic courses to host major championships, and now form three interchangeable nine-hole layouts, with rebuilt tees and tournament-grade greens, and a 13-acre driving range. The reimagined courses complement the resort’s existing 41 tennis courts, eight pickleball courts, and a fitness center. Also in the works is a planned multi-court padel complex.
